An Affair To Remember

Chocolate in all its dreamy, indulgent glory brings out the romantic in us all. From a candy bar, to your favorite pint of chocolate ice cream, it never becomes ordinary. A staple yes, beloved by many, but it never ceases to amaze our taste buds and these fudgy brownies live up to that testament. Fudgey, decadent, ambrosial brownies doused in a fudge sauce and brimming with the lighter contrast of white chocolate chips, these brownies promise an affair to remember.


Dreamy fudge brownies, perhaps the best ever. Light and delicious, bringing together all the best flavors of chocolate and sweet goodness. Easy to whip up, baking in just under 35 minutes, these are definitely worth a try.


Chocolate- The chocolate is the first step in these brownies, it combines with the butter and melts down to a thick liquid as the base of this brownie. Because the chocolate is the foundation, the quality and type of chocolate used is important. Chocolate shows up again towards the end when white chocolate is mixed in and again quality is always going to add the best flavor! I use Valhorna, Guittard, and Ghirardelli but the best available to you will do!


Brown Sugar- White sugar isn't used in these brownies because we're trying to achieve that perfect, chewy, soft bite and brown sugar with its high molasses content does just that.  


Vanilla- My absolute favorite thing is vanilla bean paste, and I tend to use it in most of my recipes. These brownies aren't any different. The flavor this vanilla renders with its beautiful black specks elevates this dessert to new heights. However if all you’ve got is extract it'll still do really well!


Cocoa Powder- This is where you can customize to your liking. The color of your brownies can sometimes vary by the type of cocoa you use. I don't have a specified type of cocoa, from organic to dutch any type of cocoa that suits your palette is welcome for these brownies. So whatever you have on hand or prefer is perfect!


Fudge Sauce- I call this my ½ cup fudge sauce because every ingredient besides the butter is ½ cup! This sauce sets beautifully and comes together so so easily!

Ingredients

Brownies

  • ½ cup butter
  • ½ cup chocolate
  • 1 ¼ cup brown sugar
  • 1 cup all purpose flour
  • Pinch of salt
  • 1 tsp vanilla bean paste
  • 2 large eggs
  • 2 tbsp cocoa
  • ½ cup white chocolate


Fudge sauce:

  • 4 tbsp butter
  • ½ cup brown sugar
  • ½ cup sweetened condensed milk
  • ½ cup heavy cream
  • ½ cup milk chocolate

Instructions

  1. Place the butter and chocolate in a heatproof bowl set over a saucepan with simmering water. Stir the mixture until it melts and leave it to cool slightly.
  2. Add in the sugar, salt, and vanilla bean paste and stir until combined.
  3. The eggs are added next, one by one until it comes together.
  4. Sift the flour and cocoa powder into the mixture and fold together with a spatula.
  5. Add in the white chocolate and pour the mixture into an 8x8 pan and bake at 350 degrees for 32-35 minutes depending on your oven.
  6. For the fudge sauce: place all the ingredients except for the chocolate in a saucepan until it melts down, cook it till you see slight bubbles and then take it off heat and add in the chocolate and mix it until it combines. Place in a container to chill in the fridge until ready to use.
