Maple Chai Chewy Sugar Cookies

I seriously can’t tell you guys how life changing these cookies are. These gluten, dairy, and refined sugar free cookies happen to be the softest, chewiest, most delicious chai in a cookie I have ever had. Don’t just try these because they’re better for you, try them because you won't ever want to try another recipe again.

These cookies are a mixture of almond and coconut flour and lend to that perfectly chewy bite. Make sure to sift these flours because coconut flour tends to clump and can remain that way even through the baking process. The chai spice and honey create that perfect chai latte flavor and balance each other along with the maple sugar. Maple sugar is a favorite unrefined sugar of mine, it has absolutely lovely flavor to desserts that coconut sugar can be too harsh for at times. I suggest anyone who wants to get into unrefined sugar baking to make the investment into maple sugar. It’s my favorite replacement for cane sugar and it works perfectly in this recipe to give that sugar cookie texture, especially when you roll the dough in it before baking. However make sure to flatten out the cookies before baking as these cookies don't flatten out as much as butter based cookies.  

The glaze here is something I am super excited about because I have been wanting to make glaze without powdered sugar and the maple sugar here melts like a dream. It creates an absolutely perfect glaze, and when mixed just right with your milk of choice sets and hardens just like a powdered sugar glaze if not better. You want to be careful as regular powdered sugar sometimes contain cornstarch and therefore thickens much quicker than maple sugar. You basically want to add in about ½ tsp at a time whisking between each ½ tsp until you get a thick glaze consistency. I basically ended up adding maybe a tablespoon or a tablespoon and a half at the most to get this glaze.

You want your coconut oil to be softened but still slightly at room temperature, I like the consistency of them better than melted coconut oil as it lends to a more sugar cookie dough and in turn bake.

Ingredients

Cookie Dough:

  • 1 ⅔ cup almond flour
  • ¼ cup coconut flour
  • 2 tsp chai spice
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ cup maple sugar
  • ¼ cup coconut oil
  • 2 tbsp honey
  • 1 egg
  • 1 tbsp vanilla extract

Maple Icing:

  • ½ cup maple sugar
  • 1-1 ½ tbsp milk of choice

Instructions

  1. 1. Begin by setting your oven to 350 degrees. In a medium mixing bowl or stand mixer, sift in your coconut flour, almond flour, maple sugar, chai spice, salt, and baking soda.
  2. 2. Add in your softened coconut oil, honey, egg, and vanilla extract and beat the mixture together until a soft yet workable dough forms. Roll into balls, coat them in more maple sugar and set on parchment paper. Make sure to flatten these balls out before baking. Bake for 13-15 minutes.
  3. 3. Start on the maple icing by streaming in your milk of choice ½ tsp at a time as maple sugar glazes need to be worked with carefully and don't need as much liquid as powdered sugar. Whisk in between each ½ tsp until you get a thick glaze consistency. You might not need more than 1 tbsp total of milk. But play it by ear and make sure to add as little milk as possible between each whisk.
  4. 4. Let the cookies cool before drizzling on your glaze and enjoy!
